Paprika and chilli in catering packs

Six items that, in a Turkish kitchen, decide whether a dish is mild or hot. Sweet red paprika is the base of colour and flavour in a doner marinade; the hot one turns it up. Pul biber is not the same as chilli — it is coarser, oily to the touch and its heat is milder and fruitier; the mild version you use like paprika, the hot one more carefully. Isot is smoked and almost black, and goes into lahmacun and adana.
